Pizza à la Sr. Ema

Le 13 janvier   There are certain things that I’ve been learning from my time here in Africa that I will carry through for the rest of my life. Truly, this has been a profound experience so far and am sure to learn so much more in the next few months here. One of the most significant things I’ve learned is how to make pizza… Sr. Ema’s way.

I suppose anyone that makes homemade pizza has amazing pizza, but this is the first time I’ve ever made such things from scratch. Her pizza recipe is the one I’ll be making for my children when they come home from soccer practice and just want to relax. They’re ADORABLE and delicious. She sometimes makes a standard-size pizza, but most often she makes little pizzas the size of a saucer and are so much fun to eat. The sauce? Oh, it’s divine – she adds just a little bit of sugar, too, so that it’s a bit sweet. Sometimes we add pineapple or salami, but just plain is divine.

When talking with my family at Barry Christmas last week, my Uncle Jim asked, “What is one thing that you learned that you didn’t think you would?” I really didn’t know what to say at first, as I’d prepared myself well for going to a developing African country. At once I knew – I never imagined I’d be learning so much about cooking. I’m loving it.
